Cherry Tomato & Feta Omelette
Omelette's (see beautifood | eggs) are great for both breakfast and dinner as they are healthy and high in 'complete' protein whilst taking little time to prep and cook. So if you're tired but still want to feed yourself (or family) a delicious (& oh so French) nutritious meal, try an omelette! You can add whatever fillings you have in your fridge or pantry, feel free to add whatever is handy at the time. This omelette is a simple recipe with cherry tomatoes and feta.
Whisk 2-3 organic eggs in a bowl and season with s&p, add dash of water or milk. Slice a handful of cherry tomatoes in half. Heat a large frypan and drizzle some butter in the pan. Pour some of the egg into the pan . Place a few cherry tomatoes into the egg mixture, as well as some crumbled feta and chopped basil leaves. Once the omelette has nearly set, fold half of it over so the filling is incased inside the omelette. Allow to brown a little on the outside then serve with a simple green salad! For more just increase the number of eggs & divide. Easy.
