The pancakes were popular so here is a quick recipe for a skin (& kid) loving sauce. Prepare the sauce first so it's cooking whilst you make the batter and cook the pancakes. See here for pancake recipe
. I've kept the sugar low but enough to give a little sweet treat - and don't forget there is no sugar in the pancake batter.
No matter which berries you choose for this recipe (I love blueberries and raspberries), your skin (& hugs from family) is sure to come out on top. Berries are packed with the antioxidants knowns as anthocyanins - the blue red coloured pigments that give these fruits their beautiful colour. They belong to the flavonoid family, a class of food actives known for its anti-allergic, anti-inflammatory, anti-microbial and anti-cancer properties.
Blueberries are a starfood providing more antioxidant activity than most fruit & vegetables - this means more power to fight wrinkles as they protect the integrity of the support structures in skin & veins. It also means stronger, healthier blood vessels which means improving the delivery of nutrients and oxygen to your skin giving it a healthy glow, inside out.
Raspberries do what blueberries do (but not quite as potent) and also have the added benefit of being packed with manganese and vitamin C. In one cup you get at least half your daily intake of both! Vitamin C plays it role as a fighter of free radicals and improves the absorption of iron & regulation of vitamin E. Manganese loves to keep your bones strong, nerves healthy and blood sugar levels normal.
1/2 cup frozen blueberries
1/2 cup frozen raspberries
1/4 cup water
2-3 tablespoon unrefined sugar (or berry jam)
OR stevia to taste
Put all ingredients in small shallow fry pan and cook on medium heat until berries defrost, cook and the sauce reduces a bit.Takes 5 to 10 mins.
Spoon over cooked pancakes, top with natural yoghurt and muesli.
TIPS & TRICKS
- using a fry pan means the sauce cooks quicker as there is greater surface area to evaporate off the liquid.
- great way to use up those strawberries that go soft overnight!
- berries from the supermarket are fabulously economical: $5 for 500g.
- I have not found a child that does not love this recipe
- use the sauce as an healthier alternative to top ice cream
