YOU'LL LOVE...
This vegie burger is a great way to get your kids (and you too) to eat a variety of vegies in a simple burger patty. This patty is brimming with skin-loving vitamins and minerals, which through the chickpeas and kale, help to fight redness and puffiness whilst keeping the skin structure firm and toned to help keep skin healthy and youthful looking.
You can add any vegies of your choosing to this recipe. Try this healthy burger for dinner tonight!
TO MAKE..
To a food processor or blender add: 1 can of drained and washed chickpeas, 1 grated carrot, a handful of chopped broccoli, 1 cup of defrosted frozen peas, 2 cloves of garlic, a handful of rinsed and chopped kale (or spinach), a handful of flat-leaf parsley, 2 eggs, S&P and 2 tablespoons of wholemeal flour (or any other flour of your choosing) or sourdough breadcrumbs. Blend until combined then remove. Form into patties and BBQ or pan-fry until golden brown on the outside and firm to touch. Toast up some wholegrain rolls and layer with lashings of hummus or pesto along with avocado, tomato and rocket. If time allows, you could also add some grated beetroot or mashed pumpkin or sweet potato to the patties for extra colour!
