Glow Balls Recipe | the perfect, protein-packed, portable snack

This recipe is a craving buster, and contains no added sugar, is gluten free, protein-packed and makes the perfect go-to portable snack. Oh, and did we mention that it will boost your brain and nourish your skin. What more could you want!

BEAUTY BOOST

These little bliss balls are just packed full of goodness! Firstly raw cacao is full of flavonoids, which act as natural antioxidants. In fact, raw cacao has the highest antioxidant value of all the natural foods in the world! These antioxidants protect the body from ageing and disease by neutralising free radicals before they damage the structures of your skin that keep it tight and youthful looking. The fibre in the dates helps to keep your blood vessels healthy so that it can provide your skin with these nourishing antioxidants along with oxygen and other nutrients.

Walnuts are wonderful. These little cerebral shaped nuts are funnily enough excellent for brain health! Also their protein content is excellent for stabilising blood sugar while their omega-3 fatty acids have an anti-inflammatory effect that can stop the causes of wrinkles before they start. The cytokinins in coconut regulate the cell growth, which minimises the ageing of skin cells, balances PH levels and keeps the connective tissues strong and hydrated.  A high fibre and manganese content assists in digestion and absorption of all these important nutrients mentioned.

YOU’LL NEED

– 1 cup fresh seedless ‘medjool’ dates

– 1/4 cup raw cacao (use Loving Earth – you can find this in most health food stores)

– 1 cup raw walnuts

– 1 cup of almonds or other nuts (hazelnuts are wicked) & / or seeds such as sesame, pumpkin, sunflower.

– 1 tspn cacao butter or coconut oil (melted)

Optional

– zest of lemon or orange, or

– scraped vanilla bean pod / pure essence, or

– spice – chai or cinnamon, and/or

– handful cacao nibs

TO ROLL balls in

One or any of the following:

– organic shredded coconut, cacao, chia seeds, sesame seeds, goji berries,

TO MAKE

Throw all these ingredients in to a food processor and whizz until mixture is like a dough. Roll mix into small balls, roll balls in the shredded in coconut and keep in the fridge until firm.

TIP & TRICKS

Have fun by mixing up the textures and flavours of your Glow Balls. Maybe add a bit of lemon rind to the mixture for a zesty twang of flavour. Or instead of rolling in coconut, maybe try cacao, chia seeds, sesame seeds or goji berries create a beautiful look on the platter & to feed your skin!

TO SERVE

Make up a platter with a variety balls or pop 1 or 2 onto a pretty little plate and serve with a cup of re-balance tea.

Chia Seed Pudding | the ultimate guilt-free, low sugar, raw dessert

Serves 1  | 15 mins go-to-wo

There is no guilt in eating a (chia seed) pudding, right? This nutritious and body-delicious recipe is so quick, easy and fail proof to make! 

BEAUTY BOOST

Chia seeds are one of nature’s superfoods and these little seeds have more than enough goodness packed inside them – 30% omega 3 + 23% protein – mind you they are incredibly light so you need to eat heaps. Omega-3 essential fatty acids are ideal for your brain and body – they help to reduce inflammation, fight against wrinkles by keeping skin cells hydrated (form a membrane) and can radically alleviate symptoms related to skin disorders like acne and psoriasis. Chia seeds also contain high amounts of calcium and phosphorus, both of which help to maintain bone and oral health. And, we love the high protein content to help build, grow, repair and rejuvenate the cells in skin, hair and nails.

Antioxidants are in abundance in the almond milk and raw cacao. The vitamin E in particular helps protect cells from free radical damage by protecting collagen and elastin structures. They also keep skin fats healthy which keeps skin moisturised and promotes a soft and glowing complexion. And even dates, the natural candy fruit, are just so nutritious being packed full of fibre to aid your digestion and absorption of all these fantastic vitamins and minerals.

YOU’LL NEED

(Multiply this recipe by number people you need to serve)

1 cup almond milk (store bought or homemade)

2-3 pitted dates (depending on how sweet you like it – dates are >60% sugar)

2-3 tablespoons raw cacao powder (depending on how chocolatey you like it!) note: I personally love the brand Loving Earth – you can find this in most health food stores

3 tblspn chia seeds

Spices eg  ½ teaspoon pure vanilla extract or pinch of cinnamon or chai spices

TO MAKE

  1. Place the almond milk, dates, vanilla and cacao in blender until completely smooth.
  2. Pour chia seeds into medium bowl and add almond milk mixture. Stir immediately.
  3. Allow to sit for 10 minutes with intermittent stirring until it thickens…. and the Chia seeds remain in suspension.
  4. Cover and refrigerate for an hour. Add tasty toppings like cacao nibs, berries, shredded coconut, or chopped nuts.

TIP & TRICKS

  • Experiment with the taste and texture of the puddings! Vary the ratios of the dates, spices and cacao in the almond milk mixture and try an array of different and delicious toppings.
  • All you need to remember is 1 cup liquid = 3 tablespoons of Chia seeds and you can make anything! Eg for a vanilla pudding, omit the cocoa and dates and add 1-2 teaspoons of maple syrup and  vanilla bean.

TO SERVE
Serve Chia seed pudding in individual pots with whatever garnish you wish: a sprinkling of berries looks gorgeous while nuts or toasted coconut add an awesome crunch to the pudding.

The flowers are thriving, the cooler months are behind us and so are the dark chilly mornings – how can the days not seem brighter! We all know that the right foods can heal the body so it’s time we embrace the beautiful fresh produce that’s around at the moment and nourish our bodies from the inside out for glowing skin and bountiful energy.

We’ve gathered together a list of our top 3 lük Spring salad recipes that will revitalise your insides and tantalise your tastebuds, so you look and feel light and glowing.

Whether you’re packing for a picnic, meeting friends for a BBQ or nurturing your family with lunch on the deck, we’ve got you covered with these simple, in season and most importantly, delicious salad recipes!

BEAUTY BOOST

Salads are full of nourishing goodies to nourish and protect your skin. They work to cleanse the body of toxins, leaving us feeling light yet satisfied to help us spring into Spring!

Greens such as spinach and rocket are high in phytonutrients. They contain antioxidants to protect against early signs of ageing such as wrinkles and sagging, as well as vitamins such as vitamin C to help maintain collagen structure and keep your skin firm!

Healthy fats from nuts and avocados will keep your skin soft and moisturised while iron, potassium and zinc from beetroot or broccoli provide oxygen to cells and ensure healthy regeneration and repair.  It is this variety of nutrients in salads that work together to keep our skin glowing and our body feeling great.

1. PEACH + GOATS CHEESE SALAD

INGREDIENTS

– 2 peaches, chopped, seed removed

– 1 cup rocket

– 1 cup baby spinach

– 1/3 cup goats cheese

– 1 cup chickpeas, cooked

– 1/2 cup walnuts, chopped

– 1/2 red onion, chopped

– 3 tablespoons olive oil

– juice of 1 lime

– 2 tablespoons white wine vinegar

HOW TO

1. In a large bowl place rocket and baby spinach.  Top with peaches, chickpeas, walnuts, red onion and goats cheese and gently mix.

2. In a small bowl mix olive oil, lime juice and vinegar.  Drizzle on top of salad and enjoy!

2. QUINOA SPRING SALAD 

INGREDIENTS

– 1 cup quinoa, rinsed

– 2 cups cherry tomatoes, halved

– 2 cloves garlic, crushed

– 1 tablespoon oregano

– 1/4 cup olive oil

– 1 bunch asparagus, ends removed

– 1 cup shredded red cabbage

– ¼ cup fresh basil leaves

– ½ cup goats cheese, crumbled

– 1 tablespoon red wine vinegar

– water

– salt & pepper

HOW TO

1. Preheat oven to 200 degrees. In a bowl, mix tomatoes with garlic, oregano and olive oil. Roast tomatoes on a lined baking tray for 20 minutes, or until light brown.

2. Meanwhile cook quinoa in a rice cooker (see below) or  add quinoa and 3 cups of water to a medium saucepan, bringing to the boil. Cover and reduce to a simmer for about 10 minutes or until cooked.

3. Blanch asparagus in boiling water for about 30 seconds.  Transfer asparagus to a bowl of cold water or run under a cool tap for a further 30 seconds. Drain and roughly chop asparagus stems.

4. Drain quinoa and return to the saucepan, allowing it to sit covered for 10 minutes.

5. Fluff quinoa with a fork and place in a large bowl. Add asparagus, red cabbage and tomatoes, salt & pepper taste and stir in vinegar – drizzle with extra olive oil if needed.  Top with goats cheese + basil and serve.

 3. MASTERCLASS  SALAD

HOW TO MAKE A SALAD WITH WHAT’S IN YOUR FRIDGE!

SELECT A STYLE

Asian: baby spinach, watercress, coriander, mint, mizuna, spring onions or chives

Italian: rocket (wild or large leaf), cos, basil, oregano, thyme, radicchio

French: witlof, chervil, parsley, dill, marche rosettes,

Classic butter, mignonette, iceberg, mixed leaves, cabbage, sprouts – mung beans & alfalfa, micro salad – eg mustard or broccoli

SUPERCHARGE IT

Fruit: pear slices, mango, lemon or lime zest, orange or grapefruit segments, avocado.

Vegies: tomatoes (sliced or baby), capsicum (fresh sliced or shaved – red or yellow), cucumber (thinly sliced), carrot or beetroot (grated raw – long & thin), finely sliced baby mushrooms, sugar snap peas, asparagus, shaved fennel, spanish onion.

Nuts and seeds: toasted pine nuts, sesame seeds &/sunflower seeds (toasted in tamari) or cashews, macadamia nuts, etc, toasted coconut.

Cheese: crumbled goats cheese, crumbed marinated fetta, slices of boccinicci, shaved parmesan.

DRESS TO COMPLIMENT

Oils: EV olive, avocado, avocado with lime oil, walnut, sesame.

Vinegars: balsamic, white balsamic, balsamic glaze, juice of lime or lemon or pink grapefruit or orange, raspberry vinegar,

Seasoning: Salt flakes such as Murray River or Maldon + ground black pepper, garlic.

Throw your greens in a large bowl, top with your supercharged goodies and drizzle with some dressing!

Here are a few examples we love:

  1. Asian style bbq fish or chicken: baby spinach + mint + coriander + mango  (summer) + cucumber +  lime zest + lime juice + EVOO + S&P.
  2. BBQ lamb chops or NY steak: mixed baby leaves + avocado + parsley + toasted sunflower & sesame seeds + walnut oil + white balsamic vinegar + S&P.
  3. Pasta: Cos lettuce + tomato + basil leaves + olives + EVOO + balsamic glaze + shaved parmesan + S&P.
  4. Savoury tart or omelette: butter lettuce + radicchio + pear + pinenuts + EVOO + chives + raspberry vinegar + S&P

And who does not love fruit topped crumble? Working to boost your immune system and fight wrinkles, our pear and berry crumble recipe with a nut, oat and coconut oil topping takes less then an hour to make – 20 mins to cook / mix and 20 mins to bake making it an effortless way to end a cool winters day.

BEAUTY BOOST

Strawberries: Looking to reduce acne?  Strawberries are naturally rich in salicylic acid – a common ingredient in commercial acne creams! They also help to whiten your teeth and provide a radiant smile.

Blueberries: Full of antioxidants, blueberries have one of the highest antioxidant counts of everyday fruit. They have been proven to fight wrinkle formation by neutralising free radical damage to tissues in the skin, including collagen and elastin.

Pears: Vitamin C works to produce and maintain collagen in your skin helping to keep it plump and feeling smooth.

Raspberries: They are a rich source of dietary fibre to flush out toxins and create clearer skin while helping to fight blemishes or breakouts.

Oats: Also high in fibre, oats help to regulate blood sugar levels while vitamin B aids the regeneration of skin cells for a fresh, revitalised appearance. The iron in oats allows the skin to recieve oxygen to grow and repair, keeping it strong and wrinkle free!

PEAR AND BERRY CRUMBLE RECIPE

40 minutes wo to go. Serves 4

YOU’LL NEED

3 cups berries (fresh or frozen)

2 pears, peeled, cored and chopped

3 tablespoons fresh orange juice

1 teaspoon ground cinnamon

3/4 cup rolled oats

1/3 cup almond meal

1/4 cup rapadura sugar

1/4 cup nuts, crushed (almonds, pecans, walnuts, hazelnuts etc)

1 tablespoon coconut oil (melted)

HOW TO

1. Preheat the oven to 160 degrees.

2. Heat a saucepan over low heat.  Add pears, berries, orange juice, cinnamon and simmer for 10 minutes, stirring occasionally.

3. Meanwhile, grease the sides of a baking dish with a small amount of coconut oil.  In a large bowl mix oats, almond meal, sugar, nuts and remaining coconut oil.

4. Pour berry mix into the baking dish and top with oat mix. Bake for 15 to 20 minutes, or until slightly golden.  Serve pear and berry crumble warm.

TIPS AND TRICKS
  • Make extra crumble topping and simply top with a few fresh berries and yoghurt for breakfast the next day!
  • Use fresh or frozen berries.
  • Save a teaspoon of the warm berry mix and blend with 1/4 cup of walnuts and 1 frozen banana for a delicious ice cream!

When buying peaches, check to see how they feel. They shouldn’t be overly hard or mushy, when squeezed gently their skin should give slightly to the pressure.  Avoid ones with wrinkled skin and look for ones with a sweet aroma and buy organic when possible.

Garlic’s beauty benefits are predominantly from sulfur compounds, like Allicin which helps to provide both anti-inflammatory and anti-bacterial protection to the body.  This helps to control bacteria and viruses while supporting your immune system to keep you looking and feeling great. It also helps to promote clear skin, cleansing your body and soothing inflammation.

COOK:

Try to include at least half a clove in an individual serving, if you’re cooking for 4 that means at least 2 cloves in the recipe. Finely dice or crush the garlic and add it to dishes either raw or cooked, you can even bake it whole.

TIP:

Allicin is released when the clove is chopped, crushed or chewed. Letting the garlic sit for a few minutes after chopping or crushing allows as much allicin to released as possible – once it begins to cook, no more will be released.

Celery is in rich vitamin K with a high water content which works to brighten your skin by reducing darkness from under your eyes, dullness and helping to keep skin cells plump. Celery is also an alkalizing vegetable, meaning it helps to decrease acidity in your body and restore balance.

COOK:  

All of celery is edible! Commonly used for its petiole (stalk), the leaves of celery are also full of nutrients. Use celery in soups, stews or salads.

TIP:

Choose celery that looks crisp and crunchy. To regrow celery from scraps, chop the base of the celery about 10cm from the end and place it in a dish of water in a sunny area. After around three weeks you can transplant it into the garden.

A symbol of paradise, pineapples with their sweet tropical flavour are indigenous to south America. They contain tough, waxy leaves with a distinct, green to yellow patterned skin with fibrous yellow flesh and a darker yellow, edible core.

FOOD ACTIVES:

BEAUTY BENEFITS OF PINEAPPLE:

The key beauty benefits of pineapple stem from the enzyme known as bromelain.  Bromelain is anti-inflammatory which softens skin and helps to reduce redness or swelling. This Root vegetable is a cream to white colour and grows with a green leafy top when in the ground. They are just like  a carrot but sweeter and were used as a sweetener before sugar cane.

FOOD ACTIVES:

Vitamin C, vitamin E, vitamin K, folate, niacin, calcium, copper, potassium, iron, fibre and falcarinol.

BEAUTY BENEFITS OF PARSNIPS:

The beauty benefits of parsnips begin as potassium balances fluids in the body.  This helps to maintain optimum levels of moisture in the skin, keeping it hydrated and smooth. Parsnips contain a nutrient called falcarinol which acts as both an anti-inflammatory and  antioxidant nutrient. This helps to rid the body of any damaging free radicals while giving you a smooth, clear toned complexion. Parsnips are great for cleansing the body as it is rich in fibre.  This helps to maintain a radiant appearance, while copper helps to stimulate collagen and elastin formation, encouraging a revitalised complexion.

COOK:

They can be eaten both raw (grated into a salad like celariac) and cooked, either baked, boiled, fried, steamed or roasted. Parsnips are even boiled in soup and then removed to provide a gorgeous subtle flavour.

TIP:

Similar to potatoes, parsnips can either be eaten with the skin or peeled.  When eaten with the skin don’t forget to scrub the outsides, and when peeling, peel a thin layer to ensure you retain as many nutrients as possible.
