Healthy Mocktail Recipe – skin hydrating Watermelon

This healthy mocktail recipe is a refreshing, guilt free way to hydrate and revitalise your body on any occasion.  As watermelon is 91% water, this recipe will leave you feeling fresh and light and with the added ice, will help to cool your body and bare the heat of a hot summers day whilst giving your skin a powerhouse of antioxidants.

BEAUTY BOOST

Watermelons are high in vitamin A, vitamin C and lycopene which work together as a hero combination for your skin. Lycopene is fat soluble meaning it is an especially effective antioxidant and helps to protect skin cells from damaging UV rays and free radical damage.  Vitamin C from watermelon and oranges is water soluble meaning  it helps combat wrinkles and sagging from the inside of your cells by strengthening collagen and elastin which works to keep your skin firm and tight.  Vitamin A and limonoids in limes provide  lasting antioxidant protection whilst mint provides a refreshing taste whilst reducing inflammation, helping to sooth the body and reduce redness within your complexion.

SKIN LOVING WATERMELON HEALTHY MOCKTAIL RECIPE

Takes 10 minutes. Serves 4

YOU’LL NEED

1/4 watermelon, (seedless or seeds removed)

2 oranges

1 lime

1/4 cup strawberries

2 1/2 cups ice

1/4 cup mint

HOW TO
  1. Juice oranges and lime, add to blender with chopped watermelon.
  2. Add strawberries and 2 cups of ice to the blender and blend for 1 minute or until smooth.
  3. Pour into glasses (or a large jug), stir in remaining ice cubes and mint into your healthy mocktail and enjoy!

  • Add vodka!!

Watermelons are known for their vibrant green skin and lush pinky red flesh.  They grow on vines and are native to Africa, thriving in tropical locations.

FOOD ACTIVES:

Antioxidants such as beta carotene, lycopene, vitamin C and vitamin A, vitamin B6, thiamin, citrulline, copper, magnesium and potassium.

BEAUTY BENEFITS OF WATERMELON:

Watermelon is high in citrulline which is converted to the amino acid, arginine in your body.  Arginine soothes your muscles while increasing blood flow which is fabulous for promoting hair growth as it ensures a healthy scalp and encourages circulation of blood and nutrients. Watermelons are also alkaline foods which balance the acidity levels in your body.  They are rich in vitamin A, vitamin C, and lycopene all of which help to protect your skin and body from free radical damage, leaving your skin feeling fresh and revitalized.

COOK:

Watermelon has a high water content of 92% which makes it a great snack and helps to keep you hydrated. Watermelon rind and seeds can also be eaten, they’re high in iron and zinc, but compared to the flesh they don’t have a very appealing taste!

TIP:

Don’t forget to allow your watermelons ripen! The highest concentration of lycopene and beta carotene is found in a ripe watermelon, when it turns to a more redish colour.  A ripe watermelon is heavy, and slightly dulled when compared to it’s shiny unripe skin.

GREEN SMOOTHIE SKIN FOOD | Avocado, Mango, Banana, Kale + Chia Seeds

[recipe] Makes 4 large glasses | 5 mins wo-to-go | No Cook

We made this gorgeous green smoothie last friday in my inaugural “Beauty Wellbeing Workshop”. It was creamy smooth and delicious even tho it sounds an unusual combination. We drank it as an appetizer in the glam gold glasses as we prepped our lunch. Kelly’s scarlet nails look a treat next to it! You could also do shot glasses and pop a few edible decorative goodies on top.

I love to cook by looking at the ingredients I have on hand rather than following a recipe (hence the combo) and Ursula got to experiment with the ‘turbo charged’ cocktail blender I have  had for eons but rarely use – there was not a spec of kale in sight. So go ahead, experiment using this recipe as a guide.

BEAUTY BOOST:  Anti-inflammatory, rich in antioxidants, immune boosting, vitamin ACEK rich, EFA’s.  

Avocados for essential fatty acids and Vitamin E to keep skin soft and smooth. More on avo. Mango are rich in the carotenoid antioxidants + vitamins A&C – keeping your skin tight and toned. They also contain silica – a food active nutrient that acts as an internal moisturiser. Undeniably bananas are high in sugar (about 20g in a ripe one) and give you an energy burst (yeh if you are tired), but they also contain a high amount of fibre including the prebiotic inulin, which feeds our beneficial (probiotic) gut bacteria, the first line of defence for the immune system. Keeping your gut bacteria healthy can prevent inflammatory conditions like eczema and support the digestion and absorption of nutrients needed to retain optimal health and keep you looking and feeling younger. The high level of potassium ( ~ 400mg) they contain helps transport O2 round the body to renew and revitalise the skin. Kale is an excellent source of calcium, vitamins AC & K – all essential for skin health and Chia seeds are an excellent non-animal source of skin loving omega 3 to keep skin looking moist and plump.

YOU’LL NEED…..

1 ripe avocado

1 banana

1 mango (optional)

3-4 kale leaves

3 stems fresh mint leaves

1/4 whole lemon

2 tspns chia seeds

1 cup ice

1 cup chilled water or coconut water

TO MAKE….

Put  all ingredients in blender. Mix on high til smooth and creamy.

Serve in classes with a spoon or thick straw! Garnish if you have guests!

TIPS & TRICKS

  • For a more liquid smoothie add more water or if you don’t want the flavour diluted another high water content vegetable such as cucumber or a liquid such as coconut water, almond milk or dairy milk.
  • For more dimension and an extra hit of Vit C (support collagen synthesis) add a squeeze of lemon juice.
  • For a bite add a dash of tabasco sauce.
  • Add some probiotics via an unsweetened yoghurt.
  • If you want a lower sugar content – remove one or all of the fruits. I like it as is and because I don’t eat much food with added sugar.
  • You can sub in fresh pineapple for mango, parsley or spinach for kale etc.
  • Chia seeds swell to 10times their size so they have a real thickening effect on the smoothie. For a more liquid smoothie –  sprinkle on top instead of adding in.

COOK:

Try to include at least half a clove in an individual serving, if you’re cooking for 4 that means at least 2 cloves in the recipe. Finely dice or crush the garlic and add it to dishes either raw or cooked, you can even bake it whole.

TIP:

Allicin is released when the clove is chopped, crushed or chewed. Letting the garlic sit for a few minutes after chopping or crushing allows as much allicin to released as possible – once it begins to cook, no more will be released.

Thai Style Raw Zucchini Noodles Recipe

 Our Raw Zucchini Noodles Recipe is the perfect light go-to recipe that will leave you feeling revitalised and rejuvenated. 

With an exotic Thai style, this zucchini noodle, or ‘zoodle’ recipe will be your go-to recipe for a quick lunch, light dinner or easy meal for when company drops in. It’s not only quick and easy, but this recipe maintains the fun in eating ‘noodles’ without the bloated or ‘full’ you can sometimes be left with from gluten. All you need to do in this recipes is spiralize your zucchini, throw the ingredients into the pan and you have one delicious, nourishing dish which you can vary it by adding different herbs or vegetables and it will soon be your go to meal for a quick and healthy dish.

What does spiralize mean? This handy gadget will allow you to whip up a storm in minutes.  Spiralizers range from around $20 to $40 and can be bought online or sometimes found at farmers markets.  They allow you to twist vegetables such as zucchini or carrots to produce long spaghetti likes spirals.  This allows you to eat spaghetti while moving away from gluten.

BEAUTY BOOST

Zucchini‘s high water content makes it excellent for helping to revitalise and hydrate your skin.  It also contains vitamin A which protects your skin through the epidermal layer.  This means zucchini helps to absorb the sun’s UV rays which can otherwise damage your skin and cause signs of premature ageing such as wrinkles or age spots.

THAI STYLE RAW ZUCCHINI NOODLES RECIPE

10 minutes wo to go. Serves 2

YOU’LL NEED

2 Large zucchini, spiralized

2/3 cup bean sprouts

1 clove garlic

1 teaspoon grated ginger

1 small chilli, finely sliced

2 tablespoons olive oil

3 tablespoons lemon juice

1 teaspoon tamari

2 teaspoons sesame seeds

1 tablespoon coriander

HOW TO
  1. Combine zucchini noodles, bean sprouts, garlic, ginger and chilli in a large bowl.
  2. Mix olive oil, lemon juice and tamari in a small bowl.
  3. Divide the zucchini into two bowls and top each with half of the olive oil dressing, sesame seeds and coriander.
TIPS AND TRICKS
  • Add in some more chilli for a spicy kick or add in a variety of herbs and vegetables such as red cabbage, finely chopped carrot, snow peas or cherry tomatoes to vary the zucchini noodles recipe.

COOK:  

All of celery is edible! Commonly used for its petiole (stalk), the leaves of celery are also full of nutrients. Use celery in soups, stews or salads.

TIP:

Choose celery that looks crisp and crunchy. To regrow celery from scraps, chop the base of the celery about 10cm from the end and place it in a dish of water in a sunny area. After around three weeks you can transplant it into the garden.

A symbol of paradise, pineapples with their sweet tropical flavour are indigenous to south America. They contain tough, waxy leaves with a distinct, green to yellow patterned skin with fibrous yellow flesh and a darker yellow, edible core.

FOOD ACTIVES:

BEAUTY BENEFITS OF PINEAPPLE:

The key beauty benefits of pineapple stem from the enzyme known as bromelain.  Bromelain is anti-inflammatory which softens skin and helps to reduce redness or swelling. It can help with digestion, working to ease bloating. With its high vitamin C, pineapple is also great to tighten and plump skin for radiant, glowing skin.

COOK:

This vibrant fruit can be eaten fresh or cooked.  Pineapple is great when juiced, added to a fruit salad, or even in savoury dishes!

TIP:

Once picked, pineapples become juicier but not sweeter so be sure to pick one with a sweet aroma and healthy green leaves. Try to pluck a leaf from the center, if it comes out it is ripe but if it comes out too easy it is over ripe.   Once cut,  cover and refrigerate for 2 days.

Gluten Free Savoury Pancake Recipe – with chickpea flour

The lightness and delicate nature of these gluten free savoury pancakes won’t leave you feeling bloated as they nourish your body inside out – the perfect light meal or substantial snack. 

We all know how important it is to live in balance – mixing up your staples and feeding your body with a variety of ingredients is paramount.  Although wheat is a common staple in the western world, it doesn’t have to be used as the main grain in every meal (think cereal, bread, crackers, biscuits, pasta) – we tend to be brain washed into thinking that wheat is our only choice.  This gluten free savoury pancke recipe allows you to explore using wheat free flour, even if you don’t require gluten free dishes for gut sensitivity issues.

Chickpea flour crepes are derived from the glorious socca recipe.  Socca is made from chickpea flour, oil and water and is a common street food eaten in the south of France.  It is baked in either an oven or over a wood fire to create a yummy thick pancake.

I have a taken the traditional recipe and made it into an easy-to-cook and eat thin batter.  This savoury pancake recipe can be prepared ahead of time and filled and wrapped with lots of fresh goodies.

BEAUTY BOOST

Chickpeas are an excellent source of protein!  Protein is vital for both the growth and maintenance of cells within your body. That means it is key to giving you a glowing appearance by replacing dead skin cells with new fresh, strong ones as well as maintaining healthy hair and nail growth.  Chickpeas also contain molybdemum which assists to cleanse the liver and detoxify the skin. This allows your complexion to radiate (even more!) from the inside out!

Turmeric is our go-to spice to beat inflammation! It works to reduce redness and puffiness while maintaining an even skin tone for a bright complexion. Turmeric even helps to preserve strong, lush hair by protecting your follicles from damage.

GLUTEN FREE SAVOURY PANCAKE RECIPE

30 mins wo to go.  Serves 4 (makes 10 thin pancakes)

YOU’LL NEED

1 1/4 cup besan (chickpea) flour  (store bought at your local supermarket – sometimes called garbanzo)

1 cup water

1 cup milk of choice (try our walnut milk)

good pinch salt + pepper if desired

2 eggs

2 tablespoons olive oil

½ teaspoon turmeric

½ teaspoon oregano

1 tablespoon lemon juice

HOW TO

1. Mix Flour, salt, turmeric and oregano together in a large bowl, creating a well in the center.

2. Add water, milk, eggs, oil and lemon juice , whisk until combined and smooth. Mixture should be runny but well beaten.

COOKING YOUR PANCAKES

It’s important to note, these are crepe-style pancakes not thick ‘brunch’ ones hence the batter is runny and producing deliciously delicate pancakes.  We recommend using a typical ‘light weight’ pancake frypan or crepe pan to give a finished pancake size of about 170mm. The pan needs to be light enough to swirl the batter to the edges and to shape and  ‘flip’ the pancake rather using a large pan.

3. Heat fry pan over medium heat. Once hot add drizzle or ‘brushing’ of olive oil to the pan.  Pour in a ladles worth (around ¼ cup 6oml of  batter) and quickly swirl the pan around to spread the batter out to the edges.

4. Cook for 1 to 2 minutes and flip your chickpea flour pancake – you’ll see bubbles form, cooking for a further 1 to 2 minutes.

5. Serve warm or room temperature with desired toppings!

TIPS AND TRICKS
  • Mix and match different herbs to change up the flavour of the savoury pancake recipe. Add in some crushed garlic and fresh oregano, or try rosemary or fresh parsley or even smokey paprika. Cumin and or coriander are my favourite aromatic spices that work well with besan too.
  • Top or fill. eg tomato salsa with a crumble of goats cheese, some tuna and avocado with a fresh lemon zest or sour cream and fresh rocket.
MAKING YOUR OWN CHICKPEA FLOUR

1. Pour 250g of dried chickpeas into a Vitamix or food processor and process for 3 minutes, or until powdery.

2. Sift the mixture to filter out the large pieces, blending them again.  You can also use a coffee or spice grinder to grind the left over large pieces into a beautiful powder.

3. Once ground several times, sift the flour mixture to remove any small granule type pieces.  These will not blend easily and can be thrown out.

4.  When using in the batter, only 1 cup is needed as it is slightly thicker than besan flour. Experiment – if the batter is too thin it will go lacy and break so add more or if too thick the batter won’t spread by itself in the pan so add more liquid.

5. Store left overs in an air tight container and save for the next time you make this gluten free savoury pancake recipe!

We’ve made over the humble potato and sweet potato chips so you can feel good knowing they are cooked with healthy fats and packed full of deliciousness. 

This ‘no deep fry’ recipe allows you to sit back and relax, knowing that chips can still taste delicious and not inflame your body or skin!  And, you can mix and match herbs and spices with flavours you love.

BEAUTY BOOST

Potatoes are full of Vitamin C!  This helps your body to defend against free radicals that cause wrinkles and skin damage. They have also been said to even out skin tone. Potatoes contain a high fibre content which not only aids digestion but also allows your body to absorb as many nutrients as it can.

Turmeric works to sustain a bright, youthful appearance by reducing redness and puffiness.  It does this through its anti-inflammatory and antioxidant properties, helping to create an even tone and avoid early ageing skin. Turmeric also contains antibacterial properties which help to reduce acne and clear skin pigmentation.  This spice is easy to add and provides tons of gorgeous benefits! HEALTHY POTATO AND SWEET POTATO CHIPS RECIPE

30 minutes wo to go. Serves 4

YOU’LL NEED

4 potatoes

1 large sweet potato (orange / Kumera)

1-2 tablespoon olive oil

1/2 teaspoon nutmeg

1 teaspoon dried oregano

1/2 teaspoon turmeric

generous pinches of salt flakes

ground pepper

HOW TO

1. Preheat oven to 200 degrees. Peel and thinly slice potatoes.

2. Place sliced potato into a bowl and drizzle with olive oil. Add spices and season sweet potato chips with salt and pepper.

3. Combine well – clean hands* work well for this job, and spread across a baking tray lined with baking paper.

4. Place into oven and cook for 15 to 20 minutes or until sweet potato chips are golden in colour and slightly crunchy.

TIPS AND TRICKS
  • Needs a serious hot oven to dry out and surface of the potato and make them ‘puff’ up as the starch cooks and lets off steam it gets caught inside!
  • Or, finish off under the grill to crisp up edges.
  • Eat sweet potato chips immediately or, like baked potatoes they will go soft.
  • You can leave the skin on if you like for extra fibre and a rustic look
  • Mix up your spices – smokey paprika and oregano are a delicious combination too. As are garlic, rosemary & lemon zest.
  • Like a crunchier chip? Place potato slices in a large bowl of ice water about an hour before cooking.  This will remove some of the starches and help them crisp up! Before beginning step 2, dry slices with a tea towel and continue.
  • Serve sweet potato chips on the side of a main meal or whip together a quick dip with avocado and lemon juice!

* you may want to wear gloves if you use turmeric as it tends to leave everything yellow!!

This Root vegetable is a cream to white colour and grows with a green leafy top when in the ground. They are just like  a carrot but sweeter and were used as a sweetener before sugar cane.

BEAUTY BENEFITS OF PARSNIPS:

The beauty benefits of parsnips begin as potassium balances fluids in the body.  This helps to maintain optimum levels of moisture in the skin, keeping it hydrated and smooth. Parsnips contain a nutrient called falcarinol which acts as both an anti-inflammatory and  antioxidant nutrient. This helps to rid the body of any damaging free radicals while giving you a smooth, clear toned complexion. Parsnips are great for cleansing the body as it is rich in fibre.  This helps to maintain a radiant appearance, while copper helps to stimulate collagen and elastin formation, encouraging a revitalised complexion.

COOK:

They can be eaten both raw (grated into a salad like celariac) and cooked, either baked, boiled, fried, steamed or roasted. Parsnips are even boiled in soup and then removed to provide a gorgeous subtle flavour.

TIP:

Similar to potatoes, parsnips can either be eaten with the skin or peeled.  When eaten with the skin don’t forget to scrub the outsides, and when peeling, peel a thin layer to ensure you retain as many nutrients as possible. Choose ones medium in size to enhance both the beauty benefits of parsnips and their taste as large ones often have a musty, woody core.
