Blood Orange Raw Cheesecake Recipe

Healthy, delicious, gluten free and vegan friendly, this divine raw blood orange ‘cheesecake’ made with cashew nuts will be an all round crowd pleaser at any event! 

Not only visually stunning and delicious, this raw ‘cheesecake’ made without cheese! is simple to make. Cashews, coconut oil and coconut milk are used in place of cheese to create a creamy smooth and skin-loving filling. Keep some in the freezer for when friends show up without notice, you will never have to worry again!

BEAUTY BOOST

Cashews are rich in healthy fats similar to those in olive oil which help to keep your skin soft and smooth.  They also contain selenium which keeps your scalp nourished, encouraging healthy hair growth for long lush locks. Vitamin E also aids your hair by providing antioxidant protection.  This prevents your hair cells from damage by free radicals which in turn maintains a gorgeous, natural shine.

Blood oranges are high in anthocyanins, which is also found in blueberries. Anthocyanins are powerful antioxidants which protect both your inside and outside from free radical damage.  Along with vitamin C, blood oranges work to prevent signs of premature ageing such as sagging and wrinkles, helping you to look and feel younger! They also contain folic acid which enables our body to create healthy red blood cells helping to create a natural glow and enable correct brain functioning.

BLOOD ORANGE RAW CHEESECAKE RECIPE

30 minutes plus freezing time

YOU’LL NEED

For the Base:

1 cup walnuts

1/2 cup almonds

9 dates (just under a cup)

For the Cake

1 1/2 cup cashews (soaked for a min of 4 hours beforehand)

Juice of 3 blood oranges

1 tablespoon coconut oil

1/3 cup coconut milk

1/3 cup honey

1/3 cup lemon juice

HOW TO

1. Process dates and nuts in a food processor or blender until a sticky mixture forms. Spread the mixture onto the bottom of a cake pan (using either the bottom of a spoon or your hands) and place in the fridge.

2. Blend all ingredients for the cake together on high until the mixture is smooth and creamy – make sure there are no lumps.

3. Pour the creamy cake  mixture onto the base layer and place in the freezer for around 3 hours or until frozen.  When ready to serve, remove from the freezer and place in the fridge for ten minutes before serving. Top with some pistachios, blood orange slices or even make your own blood orange glaze.

TIPS AND TRICKS
  • To make the glaze: Blend 1 date, 1 tablespoon lemon juice, 1/2 tablespoon coconut oil and the juice of 1 blood orange
  • Throw on some pistachios and a few blood orange slices moment before service (or it will run) for a gorgeous finish to you raw cheesecake recipe!

Often found in powdered form, camu camu berries are native to the Amazon, South America.  They are tiny grape like berries, bursting with phytonutrients and are reddish in colour.

Pomegranate – that exotic fruit some of us shy from. Don’t, because once you discover its jewels you’ll wonder why you took so long! Packed with antioxidants it is considered to be one of the highest ORAC (oxygen radical absorbance capacity) values of any fruit, making it determined to smooth those wrinkles.

TIP:

There are various ways to remove pomegranate seeds but it’s important to find one which suits you! It is recommended to cut the pomegranate in half. Gently push the center upwards from the outside while gripping onto the sides (as if you are trying to stretch it open). Then hit the back of the pomegranate with a wooden spoon and voila, enjoy! (And do this in the sink and make sure you remove the white membrane !)

Ain’t No Juice Like a Cold Pressed Juice

As an avid user of a Vitamix I don’t have twang of guilt in advocating this ‘cold pressed’ style of juicing because it is so different. And you are going to hate me but if you have an older style clunker of a centrifugal juicer (like me) move it on.

I’ve been testing the Kuving’s Silent Juicer because on 7th Sept (first sat of the month) we are setting up a luk beautifood bar at The Sydney Morning Herald’s Pyrmont Growers Market (more on that in another post!) and want to offer organic cold pressed beauty juices + green smoothies.

So what makes it so good? With this type of juicing a huge amount of pressure is applied to the fruits and vegetables to extract the nectar directly from the pulp without applying heat. This pressing action helps keep the nutrients and enzymes intact, as well as creating an incredible consistency to the juices. Like the blender (because every goes in) the nutrient content of the juice is the closest thing you’ll get to eating raw fruit and vegetables. And it’s those nutrients that are going to keep you looking and feeling beautiful.

And it loves fibrous vegetable like beetroot & carrot – 2 of my favourite veggies for juicing that don’t really suit the blender. Plus when you make almond milk you don’t have to strain it – make sure you soak your nuts overnight.

The magic is in the colour and the pure beauty of a single juiced vegetable, herb, fruit of nut. Keep them separate and blend to taste as required.

What do you want from your juices?

Anti-aging

You need: Vitamin A, Vitamin C, Vitamin K, antioxidants (Lycopene)

Some other positives of this style of juicing include the fact that the juice will not separate upon settling and will keep up to three days in the fridge, so you can save time with a bulk juicing session that will last you a few days. The insoluble & soluble fibre stays in suspension. I must also include the added benefit of juicing in silence; cringe no more at the early morning whizzing and whirring that dare disturb the slumber of the kids (or hubby!)…we wish! And of course the advantage of dry pulp comes second only to the simplicity of cleaning the thing!

I spent the afternoon cold-pressing a colourful variety of my favourite fruits and vegetables – everything from apples to avocados. The results were a vibrant rainbow of fruity and veggie liquids. The next part of the fun was mixing the juices to create an array of Beautifood mocktails balancing out the beauty benefits with taste & extraction output.

Here are some of my favourite mixes. Some of them may seem obscure but you must taste before you judge!

  • Almond, pear, ginger, tumeric and carrot
  • Pear, fennel, lemon juice & rind
  • Avocado, banana and mint + ice (thru the mincer add-on)

The juices looked so pretty you just new you were nourishing not only your body but your soul too.

The pancakes were popular so here is a quick recipe for a skin (& kid) loving sauce. Prepare the sauce first so it’s cooking whilst you make the batter and cook the pancakes.  See here for pancake recipe. I’ve kept the sugar low but enough to give a little sweet treat – and don’t forget there is no sugar in the pancake batter.
