TIPS & TRICKS

  • It’s good to have several on hand and ‘manage’ their ripeness. ie because they ripen at room temperature buy hard and soft ones and move between fruit bowl & fridge. Don’t leave ripe avocados in the fridge for more than 2 or 3 days.
  • To accelerate the rate they ripen place the fruit in a plain brown paper bag and include an apple or banana in the bag as these fruits give off ethylene gas – a ripening agent.
  • Hass avocados tend to go brown quick and their quality is variable – I love to use the green skin types such as Reed or Shepard.
  • If you don’t like goats cheese – slice a ripe tomato and drizzle oil olive. You can also swap the rocket for basil.
  • * I just found goats cheese spread from France called *Soigon Chevre a Tartiner. It is soft and creamy with a delicious mild taste and bite – it’s like it is whipped which makes it so easy to use. It has a 13% fat content. I found mine in Woolworths.

KIDS

Love it without the goats cheese. If they get fussy about rocket, chop it up smaller and ‘hide’ under avocado.

Makes for a easy -to-make delicious nutritious filling in a lunch box sandwich with some green leaves or grated carrot.
