Such a delightfully simple, skin-savvy and delicious snack. There is something about the warmth of the toast and the avocado ‘melting’.

Whole grain sourdough bread
Slice & or toast bread
Spread on avocado
Top with rocket leaves
Crumble or ‘dab’ on goats cheese
TIPS & TRICKS
- It’s good to have several on hand and ‘manage’ their ripeness. ie because they ripen at room temperature buy hard and soft ones and move between fruit bowl & fridge. Don’t leave ripe avocados in the fridge for more than 2 or 3 days.
- To accelerate the rate they ripen place the fruit in a plain brown paper bag and include an apple or banana in the bag as these fruits give off ethylene gas – a ripening agent.
- Hass avocados tend to go brown quick and their quality is variable – I love to use the green skin types such as Reed or Shepard.
- If you don’t like goats cheese – slice a ripe tomato and drizzle oil olive. You can also swap the rocket for basil.
- * I just found goats cheese spread from France called *Soigon Chevre a Tartiner. It is soft and creamy with a delicious mild taste and bite – it’s like it is whipped which makes it so easy to use. It has a 13% fat content. I found mine in Woolworths.
Love it without the goats cheese.If they get fussy about rocket, chop it up smaller and ‘hide’ under avocado.
Makes for a easy -to-make delicious nutritious filling in a lunch box sandwich with some green leaves or grated carrot.
