One of the most nutritious of the brassica family, kale rates as the highest vegetable on the ORAC antioxidant scale. There are three main types of this strengthening and healing vegetable – Curly (pictured),Tuscan and Russian Red.
FOOD ACTIVES: Very high in vitamins A, K and C and a good source of calcium, manganese, phosphorus and potassium.
Inside: Vitamin A stimulates the formation of blood vessels which bring oxygen and nutrients to skin cells ensuring they can regenerate and repair. It also increases the creation of collagen which helps keep the skin firm, smooth and wrinkle free. Manganese activates the enzyme that allows the body to use vitamin C; one of the most important antioxidants in your skin.
Outside: Vitamin A improves the overall appearance of skin by improving skin tone and smoothness while helping to reduce pore size, dark spots and wrinkles. Vitamin K helps reduce bruising and redness caused by inflammation.
COOK: Rip into small pieces and add to other salad leaves. Fabulous in veggie soups, slow cooked meat dishes and green juices! You can also lightly coat with oil and oven dry into crisps.
TIP: Fabulous and easy to grow in winter to ensure you have a constant source of vitamin A, K & calcium rich greens. Tender baby leaves are now available in supermarkets for salads!
