Now onto the fun stuff... This basic recipe matches my criteria for the perfect avocado ensemble! It's healthy, quick, and easy and the kids will love it! Did I mention they it only requires five staple ingredients? YOU’LL NEED - Whole grain sourdough bread - Ripe avocado - Rocket - Goats cheese - Salt and pepper DIRECTIONS - Slice and/or toast bread - Spread on avocado - Top with rocket leaves - Crumble or †˜dab’ on goats cheese - Season with salt & pepper (optional: chilli flakes, a drizzle of olive oil) TIP: Normally avocados take a week to ripen but can be accelerate in a paper bag with an apple.
